Quelites Pesto with Sesame Seeds and Edamame Noodles

Use any of the milder flavored greens interchangeably in this recipe. Use any noodle you like or toss over spaghetti squash!

Ingredients

6 cups loose greens 

1/4 cup sesame seeds

3 tablespoons soy sauce

3 tablespoons maple syrup

2 cloves garlic

1 tablespoon grated ginger

2 teaspoons toasted sesame oil

Organic Edamame noodles (available at Costco– gluten free, 100% edamame, nothing else), or soba noodle or spaghetti squash would be good options

Directions

Clean the greens. Heat on medium in a skillet and cook until wilted and tender. Toast the sesame seeds in a separate pan until golden. In a food processor, grind the sesame seeds coarsely. Add soy sauce, garlic, ginger, greens, maple syrup and oil. Process until mostly smooth. You can add a bit of water or oil to this to desired consistency. Cook and drain the noodles. Mix with the pesto. Serve with chopped macadamia nuts.
