Fruity Nutty Wheat Berry Salad

This refreshing salad provides a delightful variety of colors, flavors, and textures.
3 cups cooked wheat berries
4 medium tomatoes, chopped
1 cup chopped almonds
2/3 cup chopped dried apricots
2/3 cup dried cranberries
2/3 cup raisins
2 cups chopped cucumber
1/3 cup lemon juice
1 tablespoon olive oil
fresh parsley sprigs for garnish
Mix all ingredients. Garnish with parsley if desired.
