Nopalito Salsa II

This is the recipe that was featured at the solar cooking demo of June 16, 2009

1 nopalito (despined)
1 grapefruit
1 tomato, diced
juice of 1 lemon
1 small onion, finely chopped
1 clove garlic, crushed
1/4 cup basil or cilantro, finely chopped
1/4 teaspoon ground cumin
1/2 tablespoon olive oil
salt and pepper to taste (I substituted chile flakes for the pepper)

Steam the whole nopalito for 15minutes.  Drain, rinse, let cool, then dice it into small diamond-shaped pieces.
Mix all ingredients and chill before serving.
