Turkey Sausage, Couscous, and Vegetable Medley

I made this last night trying to make use of some of the veggies we’ve received lately. I don’t measure ingredients, so I am estimating proportions. We liked it, hopefully someone else will too :).

2-3 Turkey Sausage Links, sliced into 1 inch pieces

1 cup uncooked couscous

1 cup snap peas, ends trimmed

3-4 purple carrots, sliced thin

2 cloves garlic, minced

juice of 1/2 lemon

several tablespoons chopped cilantro

2 green onions, sliced

1/2 bunch kale, sliced

1/2 teaspoon EACH cumin, curry powder, dried rosemary dash salt and pepper (to taste)

1. Cook couscous according to package directions, set aside.

2. In a large pan, brown sausage for a few minutes over med high heat, stiring occasionally. Add spices, garlic, carrots, snap peas, and continue to cook, stirring more frequently, until sausage is cooked through and veggies are nearly done. Lower heat to medium and add kale, stirring until it has cooked down.

3. Remove pan from heat and stir in lemon juice, cilantro, green onion and couscous. Serve warm.
