Simple Mexican Cucumber Salad

Street vendors in Mexico City, who routinely hawk mangos, papaya, melons and other fruits considered much more exciting to the norteamericano palate, will also sell sliced cucumbers with lime juice in plastic bags.
1-2 large cucumbers
2 limes
Skin cucumbers and slice longitudinally. With a spoon, remove cucumber seeds. Then slice the cucumber into thin, crescent-shaped rounds. Squeeze the limes and pour over cucumber rounds. Toss lightly. Let marinate for 30 minutes before serving. This cool side salad is a great compliment to spicy main dishes.
