Pumpkin Pancakes

Sift together:
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon brown sugar
1/4 teaspoon cinnamon

In a separate bowl, beat together:
1 egg
3/4 cup milk
1/2 cup pumpkin puree
1 tablespoon vegetable oil

Combine the wet and dry ingredients — do not overmix. Cook pancakes on griddle. Makes ten 5-inch pancakes.
