Pumpkin Cookies

Pumpkin Cookies

Shelly Adrian, Tucson CSA

1. Beat together:
1 cup brown sugar
1/2 cup oil
1 cup pumpkin puree
1 tsp vanilla

2. Sift together and add:
2 cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger

3. Blend in:
1 cup raisins
1/2 cup chopped walnuts

4. Drop by spoonful onto greased baking sheet. Bake at 350 degrees F for 12-15 minutes. Nice and moist.

    Shelly, these cookies are really good! I made them with the last bit of my pumkin from the fall harvest. Thanks for the recipe.
