Prickly Pear Lemonade (Fizzy)

1 cup prickly pear juice, or 10 prickly pear juice ice cubes
1 cup lemon juice, or 10 lemon juice ice cubes (you can use lime juice too)
1 cup sugar
1 cup water
2 liters (approx. 2 quarts) club soda, ice cold
Ice cubes
Fresh mint or basil leaves for garnish
Make a simple syrup by dissolving the sugar in 1 cup boiling water. Let cool to room temperature.
In a pitcher, mix prickly pear juice, lemon juice, simple syrup and club soda. Add ice cubes and mint leaves.
