Sweet Potato Pie

3 sweet potatoes, peeled and boiled
1 1/4 cup sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
Preheat oven to 350 degrees F
Mash the boiled sweet potatoes until most of the clumps are gone. Using an electric hand mixer, combine the potatoes, sugar, butter, eggs, vanilla, salt, cinnamon, and ginger. Mix thoroughly. Add the milk and continue to milk. Pour into the pie crust and bake for 1hr 15 mins, or until a toothpick inserted in the center comes out clean. Place the pie on a rack and cool.
Served best with a scoop of vanilla ice cream.
