Vegetarian Chile

You will need a crock pot ( or you can simmer on the stove)
Soak any kind of bean about, 3 cups dry worth ( I used a mix of black and red) overnight
Drain off the water
Add to a crock pot the beans, a whole box of the Trader Joe low sodium cream of tomato soup
Add one onion chopped and 4 cloves of minced garlic, one cubed eggplant and a cup of water, cook in crock all day or overnight
Roast some sweet and red potatoes in the oven, after cool, cube them.
Chop some roasted green chiles.
When the crock pot bean mixture is done add the roasted sweet and red potatoes, and the green chiles and salt to taste. If you want to make it spicier add some chili powder to the crock pot mixture before you cook it.
Serve this with some melted cheddar cheese on top, and a side of cornbread.
Your vegetarian friends will love you and your friends who do not like vegetables will not realize they do.
