Hot Apricot Sandwiches

Maggie Newman, Tucson CSA

1 slice of whole wheat or other bread per serving
Apricots, halved – enough to cover each slice of bread (our last CSA share would have made 4 open face sandwiches)
Cheese slices, cheddar or other mild to medium sharp cheese

Heat oven to 375 F
Butter each slice of bread. Arrange apricot halves, cut side down on slices of bread. Top with slice(s) of cheese and bake 5-10 minutes or until cheese is bubbly.
