Enough water to boil squash in one inch of water
1 teaspoon salt
1 cup chopped onion
¼ cup butter
½ cup sour cream
Salt & pepper to taste
½ cup soft fresh bread crumbs
2 tablespoons melted butter

Peel and cube summer squash. Boil in an inch of water and 1 teaspoon salt 15 minutes or until tender. Drain well and mash. Meanwhile, sauté chopped onion in butter until golden.
