Summer Radish Dip

Summer Radish Dip

Philippe, Tucson CSA

2 cups yogurt *
1 small bunch scallions or I’Itoi onions, chopped
1 bunch red radishes, sliced
2 cloves garlic, crushed
salt and pepper to taste

Mix all ingredients.
Use as a spread on whole wheat bread or as dip with pita bread.

* Greek yogurt is best for this recipe as it has a firmer texture.

    This is delicious! For a fun variation, try adding a Tablespoon of chopped capers and some horseradish sauce to taste
