Hearty Sweet Potato Casserole

Submitted by Lorraine Glazar, TCSA member.  Adapted from SavingDinner.com3 sweet potatoes, mashed
3 bananas, mashed
3/4 teaspoon curry powder
1/3 cup low fat sour cream
Salt and pepper to taste
1 egg, beaten

Preheat oven to 350 degrees. Lightly grease a casserole dish. Place all ingredients in a blender or food process. Mix or process until all ingredients are fluffy. Spoon into the prepared casserole dish and bake for 20 minutes, or until brown.

Note: This is a simple recipe that comes from a menu planning site called SavingDinner.com. This particular recipe comes from their Heart Healthy menu planner and conforms to the specifications of the American Heart Association (total calories, fat content, sodium etc). It makes an unusual meatless main dish or a nice alternative to that mashed yams with mini marshmallow stuff that surfaces around Thanksgiving (for which I don’t care at all). Bananas are not exactly a locally grown food, so I will understand if you can’t use this!
