Sweet Potatoes with Orange Marmalade

5-6 sweet potatoes
1/2 cup fresh-squeezed orange juice
1/2 cup orange marmalade*
2 teaspoon cinnamon
1/4 – 1/2 teaspoon ginger powder
salt & white pepper to taste
Preheat oven to 400 degrees.
Wash sweet potatoes and pierce skin with fork. Bake for 1 hour until soft. Farmer Frank’s sweet potatoes have lots of sugar in them, so place a sheet of foil on the rack underneath them to catch the drips.
Cool just until able to handle. Peel and mash potatoes in large bowl.
Add orange juice, marmalade, and spices, and stir well.
Spread evenly in large glass casserole dish and warm in oven.
*Note: to make quick orange marmalade, process a well-scrubbed, chopped, and seeded orange with 1 tablespoon water in a blender. Heat in a pan with 1/2 cup sugar and boil for 15 minutes. Cool and store inrefrigerator for about a week.
