Steamed Amaranth Greens (quelites) with Chili Oil, Soy Sauce, and Sesame

Season steamed amaranth greens with 1/2 teaspoon chili oil or Asian (dark) sesame oil and 1 tablespoon soy sauce. Sprinkle with 1 tablespoon toasted sesame seeds.

    You can sometimes buy at it at the Santa Cruz River farmer’s market at the Mercado. At this time of year (monsoon season), you can harvest it as a weed in many dirt lots and backyards.
