Cold Cucumber Soup 1
Adapted from Nourishing Traditions – Sally Fallon
2 medium cucumbers, sliced
1 cup chicken stock
1 cup sour cream
2 cloves garlic, mashed
1 tablespoon lemon juice
1 teaspoon finely chopped mint or dill (optional)
sea salt and pepper
Place stock, cucumbers, cream, garlic, and lemon juice in food processor and blend until smooth. Stir in mint or dill and season to taste. Serve well chilled.
Armenian cucumbers have thinner skin and soft seeds, unlike typical Garden Cucumber, and so may not require peeling or seeding in recipes unless you desire to

Meh. It ended up kind of runny. Cold cucumber soup should have more texture in my opinion. Will try one of the other recipes next time.
