Fresh Corn Dip

Makes 2 cups

2 ears corns, kernel cut from cobs
1 tablespoon butter
2 green onions finely chopped
1/2 red bell pepper, finely chopped
1 minced garlic clove
1 tablespoon chopped fresh cilantro
1/4 cup mayonaisne
3/4 cup shredded cheddar cheese

Preheat oven to 350 degrees. Heat the in large saute pan over medium heat. And the corn kernels and saute for 10 minutes. Add the onion, pepper and garlic and saute for 3 minutes. Remove from heat and stir in cilantro, mayonaise and 1/2 cup cheese. Place in small baking dish and top with 1/4 cup cheese. Bake for 20 minutes. Serve with tortilla chips.
